Lycopene may reduce risk of asthma: Study

Supplements of lycopene may protect against inflammation in the lungs and reduce the risk of developing asthma, suggest results from a study with mice.

The carotenoid, most commonly associated with tomatoes, was found to decrease the response of inflammatory cytokines in the lungs of mice, as well as a two-fold decrease in the number of eosinophils - white blood cells associated with an allergic or asthmatic immune response, according to findings published in The Journal of Nutritional Biochemistry.

"This study provides evidence that dietary supplementation with lycopene prior to and during the onset of allergic airways disease may be of clinical benefit in reducing eosinophilic infiltrates both in the lungs and systemically," wrote the researchers, led by Paul Foster from the University of Newcastle, UK.

The scientists used Lycored's Lyc-O-Mato ingredient at a dose that would equate to about 50 mg per day for a human.

As an antioxidant, lycopene has been shown to have heart, blood pressure, prostate, osteoporosis, skin and other benefits in both natural and synthetic form and it has been commonly used in food supplements and cosmeceutical applications.

Study details

The Newcastle-based scientists used BALB/c mice to model the effects of lycopene on allergic inflammation and asthma. According to the European Federation of Allergy and Airway Diseases Patients Association (EFA), over 30m Europeans suffer from asthma, costing Europe €17.7bn every year. The cost due to lost productivity is estimated to be around €9.8bn.

The mice were divided into two groups: one received a normal diet and water, while the other received additional lycopene (Lyc-O-Mato). The animals subsequently inhaled ovalbumin in order to induce asthma-like symptoms in their lungs.

Results showed that the lycopene-rich supplementation reduced eosinophilic infiltrates in the lung fluid, tissue and blood. Furthermore, levels of inflammatory cytokines IL-4 and IL-5, which were found to increase in the control group, were also reduced following lycopene supplementation.

"We conclude that supplementation with lycopene reduces allergic inflammation both in the lungs and systemically, by decreasing cytokine responses," wrote the researchers. "Thus, lycopene supplementation may have a protective effect against asthma," they concluded.

Gac fruit is without question a fruit that provides some extremely healthy ingredients. The fruit is packed full of nutrients, that for decades, have been known to be good for you. In fact in South East Asia they have known for centuries and used it sparingly in all manner of various ailments. There is no doubt it is packed full of goodness and with the facts above, it is hard not to see the benefits.

Goji Super nutrients:

All the following nutrients are present in goji berries. Data sources are from two recently published books (3,6).

1-3. Antioxidant vitamins A-C-E. Vitamin A, formed from precursors called retinol (from dairy products) or retinal (from plant carotenoids like beta-carotene present in goji), serves antioxidant, filtering and immune functions in the eye. Vitamins C and E are, respectively, water-soluble and lipid-soluble antioxidants that become resident in the eye with a variety of protective functions against oxidative and intense light stress. Goji berries are an exceptionally good source of vitamin C (29 mg/100 g dried fruit, approx. 30% of the US Dietary Reference Intake, DRI) (3).

4. Zinc. As a cofactor for numerous enzymes, some of which play antioxidant roles, zinc can be viewed as a complementary element guarding eye health. Its precise role especially in age-related macular degeneration is not yet defined, but it is nonetheless included as one of the AREDs nutrients currently under clinical study. Zinc content per gram in goji berries (2 mg/100 g, 20% DRI) is high among edible plants (3).

5-6. Zeaxanthin and lutein. Almost identical in chemical structure, these two carotenoids present in green, orange, red and yellow plant foods are selectively absorbed from the blood by the retina. They are deposited in a retinal compartment called the macula lutea where scientific studies have proved a light-absorbing filter role against intense sunlight and an antioxidant role against reactive oxygen species. Goji berry is one of nature's richest sources of zeaxanthin (162 mg/100 g; there is no DRI for this nutrient) (3).

7-8. Beta-carotene and lycopene. Not only a precursor to vitamin A formation, beta-carotene also serves as a potent antioxidant source that seeks fat layers for storage. This has significance to eye protection, as the neural elements of the retina are lined with fatty sheaths where antioxidant protection is needed. Usually associated with tomatoes (a botanical relative of the goji berry), lycopene provides antioxidant functions. Beta-carotene and lycopene contents in goji berries are exceptional among edible plants (7.4 mg and 1.4 mg/100 g, respectively) (3,4,6).

9-10. Magnesium and selenium. Although the research is preliminary at present, there is evidence that magnesium and selenium, essential minerals with rich contents in goji berries (109 mg and 50 mcg/100 g; 30% and 97% DRI, respectively), participate as cofactors in retinal antioxidant reactions (3).

11. Riboflavin (vitamin B2). Like other B vitamins, riboflavin supports energy production by aiding the metabolism of carbohydrates, fats and proteins. It has not been conclusively proved that riboflavin serves a health function in the eye. Recent research has shown, however, that riboflavin is associated with nutrition of collagen fibrils affected by cataracts and keratoconus, a degenerative corneal disease. Goji berries have among the highest riboflavin content per gram in nature (1.3 mg/100 g or 100% DRI) (3).

12. Phenolics. These chemicals from colorful plants are pigments with a great diversity of chemical structures and names. They are the main dietary antioxidants in foods Americans eat, and so likely contribute to eye health in ways not yet clear from modern research. In goji berries, phenolic concentration is particularly enriched (total phenolics of 1309 mg/100 g), with preliminary evidence that the phenolic well-known in red raspberries – ellagic acid – is also localized in goji fruit (86 mg/100 g) (6).

Although it will take years for modern science to unravel the eye health nutrients in goji berries, we have enough evidence already by knowing that these dozen nutrients are involved in supporting vision and overall health (1,2,5).

Our choice is to involve plant foods containing these nutrients in our diets, whether by using goji berries or other colorful plants foods with similar nutrient characteristics (2,6).

Spicy Slow Cooker or Instant Pot Black-Eyed Peas Recipe (mild)

Spicy Black-Eyed Peas (mild)

INGREDIENTS:
· 1 pound dried black-eyed peas
· 1 tsp. Liquid smoke
· 1 cup chopped yellow onion
· 2 to 3 cloves garlic, minced
· 1/2 red bell pepper, diced
· 1 teaspoon salt, or to taste
· 1/2 teaspoon seasoned pepper blend, or to taste (I mix black pepper, paprika, and cayenne together)
· dash crushed red pepper or ground (optional if you like spicy)
· 2 cups chicken broth and enough purified water just to cover all ingredients once in the slow cooker)


PREPARATION:
Soak the black-eyed peas overnight in filtered water. The next morning, drain the water and rinse them.

Put everything in the slow cooker or instant pot and stir.

Slow cooker version:
Cover and cook on LOW for about 7 to 8 hours, until peas and vegetables are tender. If you want it done faster, cook it on HIGH for 4-5 hours.

Instant pot version:
I use 2 cups chicken broth and 1 cup water at 30 minutes high pressure with 15 minutes natural release.

Serves 6.

Tips for easy prep:

Measure and put all spices in slow cooker the night before and cover.

Chop all veggies the day before and keep covered in fridge until needed.

Miscellaneous:
I found the original version of this recipe on the internet and made my vegetarian and preference changes. Allen grew up on this stuff in the South and says these are the best black-eyed peas he has ever had. I didn’t like canned black-eyed peas, and then I tried this recipe. Now I love them! They are great served with brown rice.

P.S. If you buy canned beans be sure to get Eden brand due to their BPA-free cans. You can make this recipe on the stove with canned beans.

Pecan Rice Dish Recipe

Pecan Rice Dish

1-1/2 cups organic brown or Basmati rice
1/2 cup pecans
1-1/2 cups celery (optional)
6-8 green onions with tops or 1/4 cup red onion
1/2 red pepper
1/2 yellow or orange pepper
1 small jar marinated artichoke hearts
1 can black beans (16 oz.), rinsed and drained (optional)

Cook the rice 45 minutes in three cups distilled water seasoned with one teaspoon of Celtic Sea Salt.

Chop onions, pecans, celery, peppers, and onions. Cut marinated artichoke hearts into bite-sized chunks and include oil and seasonings. Add to cooked rice and mix well.

Notes:
This is a recipe I found on the Hallelujah Diet website that was submitted by someone. What a great way to get in some raw veggies in a delicious hot dish!

Changes:
I used my own crock-pot black bean recipe and my rice cooker brown rice recipe.

I added the black beans over the top of the rice dish right before serving; however, the rice dish is great by itself too.

Ingredients:
3 cups Organic Brown Rice (Walmart has it cheapest)
1 Tablespoon Organic Coconut Oil (neutral taste: I like Jarrow brand)
1 Tablespoon Celtic sea salt or Himalayan Pink sea salt
6 cups purified/distilled water

Put all ingredients into a rice cooker, stir and turn on. It’s that simple!

Killer Hummus Recipe

Note: This is outrageously good even though I don't normally like anything spicy! I think the recipe could use a bit less cumin and garlic and some added sea salt though.
I found this by Googling vegan hummus. If you use canned beans make sure they are organic. I cooked a bag of dried beans (16 oz) that had been soaked overnight. I scooped out the cups requested below, along with some of the liquid, and saved the rest for other recipes. I actually add some of the extra beans to my salad for a yummy boost.
Great for dipping raw veggies like celery, carrots, etc. (this is what motivated me to make it). We all need to eat more raw veggies. Thanks Pam for that idea!

Ingredients:
· 4 cups (approx. 3 cans) garbanzo beans. Drain and reserve 1/2 cup liquid.
· 1 cup ground sesame seeds
· 6-8 cloves garlic-minced
· ¾ cup lemon juice
· 3 tablespoons Tamari (soy sauce)
· 2 tablespoons ground cumin
· ¼ teaspoon red pepper
· 1 teaspoon chili powder
· ¼ cup dried parsley

Directions:
Place all ingredients in a food processor and process until smooth. Add additional liquid from garbanzo beans as desired to arrive at a spreading consistency. Best when chilled and covered overnight.

Excellent on crackers, tortilla chips, and even toast!

Comments: Can be made in advance and frozen for later use.

1 1/2 pounds fresh green beans, trimmed and cut into bite-size pieces

Bring the water to boil in a large pot. While it's heating, cut up the beans. Add the salt and beans to the boiling water. Cover and cook for 6 minutes. Drain beans in a colander, and then spray for a minute with cold water to stop the cooking. Let them drain in the colander, shaking every now and then to get off all the water.

Sauce

10 ounces mushrooms (I used a combination of regular button mushrooms and shiitake)
3 cloves garlic, minced
generous pinch cayenne pepper (had to add it for the New Orleanians)
Salt to taste
Fresh pepper to taste
2 tablespoons flour
3/4 cup vegetable broth (I used Imagine's No-Chicken)
1 tablespoon dry sherry (Alanna's brilliant addition)
3/4 cup soy creamer (or try full-fat unsweetened soymilk)

Trim and discard the mushroom stems and chop the mushrooms into pieces. Spray a non-stick pan with canola oil and heat it. Add the mushrooms, garlic, cayenne, salt, and pepper. Cook until mushrooms are very soft and exude their juices. Whisk the flour into the vegetable broth and add to the mushrooms along with the sherry. Simmer, stirring, until mixture thickens. Add the soy creamer and simmer until thick, about 5 to 10 minutes. Adjust the seasonings and stir in the beans.

Topping

1 1/2 slices whole grain bread
1 tablespoon Earth Balance margarine (the best tasting margarine in the world and no trans-fat)
1/8 teaspoon salt
1/16 teaspoon freshly ground black pepper
1 3-ounce can of French fried onions

Put the bread, margarine, salt, and pepper into a food processor and pulse until crumbly. Pour into a bowl and add the onions. Stir to combine.

To assemble:
Put the green beans into an oiled casserole dish and top with the onion mixture. Bake at 425 F for about 15 minutes. If you are not serving this right away, refrigerate the topping separately; bring to room temperature before sprinkling the topping on the casserole and baking for about 20 minutes or until hot throughout.

Just a few weeks ago, Time Magazine published data that shows the State of Utah spends less per capita on health care than any other state in the country. And yet, that same article published data showing that Utah has one of the longest life expectancies in the U.S. In fact, a separate study cited by Forbes Magazine placed Utah among the top 5 healthiest states in the country as measured by several criteria.

But that's not all. The studies cited by Forbes also indicate that 32% of Utah residents are uninsured. That's about twice the national average.

Doesn't this defy conventional wisdom? Well, consider this: Utah has one of the highest concentrations of natural supplement manufacturers, and highest gross sales of natural supplements per capita in the country.

Is this just coincidence or is there a connection? Sure, there's more to this story than just these statistics. But isn't it worth a closer look? We sure think so.

FOODS TO AVOID
Most of us know that food itself cannot be considered poisonous. Very few of us know that pleomorphic bacteria, yeast, and fungus and their toxins, which are characteristically present in stored and fermented food, are using our food chain as a Trojan Horse.
The following list of foods are high in pleomorphic bacteria, yeast, fungus and mold and produce mycotoxins that have been documented to cause specific diseases and very specific organ lesions in both animals and in humans and should never be ingested and if eaten, only in small amounts AND never cold. Most of the foods listed if cooked throughly will kill most of the fungus. However, refrigerating them or using them cold, you are literally putting fungus into your body.
1) Pig meat including sausage, bacon, salami, and ham are full of colonized fungal and contain the fungi Aspergillus ochraceus which produces the mycotoxin Ochratoxin A which is associated with many different documented cancers.

* Cooking these meats throughly kills most of the fungus, however, cold cuts will begin to grow the fungus again and after a few days the cold meats contain the fungus again.
2) Tobacco contains yeasts and sugars which ferment the tobacco into the form which reaches the human blood and tissues causing disbiosis of the blood and tissues leading to every degenerative disease known including cancer, diabetes, arthritis, etc.

* Tobacco is bad regardless of how used except for when using tobacco leaves as the American Indian medicine men uses it. They use it as a poultice to draw our poisons out of the body, cure some skin infections and prevent infection from developing in cuts.
3) Mushrooms are not a vegetable but rather the fruiting body of a fungus whose major form of existence, the root-like mycelium, is hidden in the soil. This fruiting body is the means to disperse the seed-like spores of the fungus throughout the blood and tissues. For example edible mushrooms induce bladder cancer.

* You should never eat raw mushrooms because of this fungus. Cooking mushrooms for a period of time until they at least change color kills most of the fungus. However, if in foods that are leftovers and refrigerated, the fungus will multiple.
4) Corn and all associated products contain over 25 different strains of fungus, all disease causing. Several cancer causing.

* Corn that is cooked throughly kills most of the fungus. However, cold corn that is put into salads will multiply as the fungus grows rapidly.
5) Peanuts & Cashews contain over 27 different strains of fungus...(high levels of cancer causing fungus).

Note: Jimmy Carter's family has a high incidence of cancer.

* Peanuts baked in baked goods - kills most of the fungus. Peanuts are not wise to eat raw, peanut butter has been tested and different fungus strains have been found in peanut butter.
6) Barley contains the fungi Aspergillus ochraceus which produces the mycotoxin Ochratoxin A. This mycotoxin is associated with many different documented cancers.

* Barley that has been cooked in soups is fine. Cooking kills most of the fungus. Cold barley for salads is deadly. Refrigerating will cause the fungus to multiply even in soups.
7) Animal meat and poultry including beef, lamb, chicken, and turkey contain the fungi Aspergillus ochraceus which produces the mycotoxin Ochratoxin A. It is associated with many different documented cancers.

* You should only eat meat that has been throughly cooked so that there is not "pink" meat showing. Cooking kills most of the fungi and the body can deal with this small amount of up to 8 ounces daily of any meat. Actually, eating 8 ounces or less of any meat daily is more healthful for many reasons.
8) Alcohol including wine and especially beer contain the fungus Aspergillus ochraceus which produces the mycotoxin Ochratoxin A.

* Small amounts, 1 small glass a day is fine. The body can deal with small amount of the fungus. More than 2 small glasses of wine, beer, or alcohol daily can create toxins in the body that can cause serious health problems over time. It will also depress the immune system, causing more colds and illness.
9) Dairy products including milk, cheese, yogurt, cottage cheese, ice-cream, butter, etc. are fully colonized with fungi and contain the fungus Aspergillus ochraceus which produces the mycotoxin Ochratoxin A. These foods are also high in sugar which promotes the production of pleomorphic bacteria, yeast, and fungus.

* The least of these in fungus is 1% or 2% milk. Heating cheese to be used in macaroni kills most of the fungus. Cold cheese is loaded with the fungus, especially if it has been sitting for sometime. Cottage Cheese is loaded with the fungus. The immune system of the body can handle small amounts of 1% or 2% milk and heated cheese daily. Yogurt as long as it is made from "live" cultures is fine to eat. As a matter of fact, it is "good" bacteria that actually kills the "bad" bacteria such as yeast in the body. However, eating too much can also have negative effects. Up to 6 ounces a day is fine.
10) Eggs are fully colonized with fungus and contaminated with mycotoxins.

* Cooking them kills most of them. However, boiling eggs for salads is fine if used at one meal, however, refrigerated eggs or as in egg salad, the fungus begins to multiply again.
11) STORED GRAINS AND CEREALS ARE FULLY COLONIZED WITH FUNGUS AND CONTAMINATED WITH MYCOTOXINS.

* As long as the grains are cooked it kills most of the fungus. Grains for spagettti or pasta are fine. Oatmeal that is cooked for cereals is fine. Oatmeal baked for cookies is fine as long as eaten within a few days. Cold grain cereals are not that good to eat because of the fungus and mycotoxins. You should never eat cold pasta salads.
12) Stored potatoes are fully colonized with fungus and contaminated with mycotoxins.

* Cooking potatoes kills most of the fungus, however refrigerating will breed the fungus. Cold Potato salad is not healthy!
13) Sugar including honey maple syrup, corn syrup, high fructose corn syrup, sucrose, rice syrup, barley malt etc. promtote the growth of pleomorphic bacteris, yeast, fungus, and mold and suppress the immune system response up to five hours.

* Unless you use these in cooking or baking something which kills most of the fungus, it is not wise to use these as sweetners in drinks or drink products containing them. You should avoid all fruit juices containing corn syrup as the sweetner.
14) Vinegar or apple cider vinegar acidifies the blood and tissues which promotes the production of bacteria, yeast, fungus, and mold.

* However, if used in very small amounts, 2-3 teaspsoons on salads will kill any type of bacteria on the lettuce is not harmful and actually healthful to the body. Avoid using vinegar to flavor meats or soups. Using Italian dressing to marinate meat is not wise.
15) Yeast in any form including Brewers Yeast.

* Using the amounts needed in baking a loaf of bread is fine. The immune system can deal with small amounts. It is when you consume a number of foods daily that has yeast in it that can cause yeast infections and Candidisis Albicans.
16) Caffeine in any form acidifies the blood and tissues which promotes the production of pleomorphic baceast, fungus and mold.

* Small amounts of caffeine in tea or coffee is good for the body and the immune system can deal with this. When you drink more than 2 cups of coffee a day, you are exposing yourself to large amounts of the fungus.
17) High fructose fruits acidify the blood and tissues and feed the production of pleomorphic bacteria, yeast, fungus, and mold. For example, APPLE JUICE IS CONTAIMINATED WITH THE CARCINOGENIC MYCOTOXIN PATULIN WHICH IS DERIVED FROM THE FUNGUS AND IS ASSOCIATED WITH STOMACH CANCER.

* I strongly suggest not drinking apple juice. Even though juices are pasteurized, heated to kill bacteria and most fungus, apple juice has the highest capability of breeding more of the fungus as it sits on the shelf. Juices that contain the least amount of fungus after sitting is cranberry, ( very good for keeping urinary tract and kidneys infections down), papaya, white or red grape and pineapple. Orange juice is fine if freshly squeezed or fron a carton that has not beenmade from concentrate and drank within 1-2 days. Avoid juices from from concentrate.
18) Dried fish contains the Aspergillus fungus and the extracts from the dried fish contains large amounts of aflatoxin.

* Cooking kills most of the fungus. Eating raw fish such as in sushi is dangerous. There have been deaths caused from eating raw fish sush as in sushi. Never eat cold or refrigerated fish. Anchovies are loaded with the fungus as well as most canned fish meats. Tuna is fine because it has low fungus which the body can deal with in small amounts. Eating tuna packed in water is the best, however limit the amount to less than 4 ounces a day. Tuna and other types of fishes are known to carry mercury, PCB's and other contaminants. Never eat farm raised fish like farm raised salmon or trout. Farm raised fish are loaded with bacteria due to the small areas they are raised in and are often fed hormones to make them grow faster.
19) Devitalized salt< ( processed white store bought salt ) changes the negative charge on the blood cells causing them to stack or combine into symplasts which can lead to oxygen deprivation, congestion, poor circulation, stroke, and/or heart attack. * Use natural sea salt that has had iodine added is the best. Actually sea salt does wonders for the body and is needed by the body. Recent studies show natural sea salt does not raise blood pressure like once thought it did. 20) Hydrogenated or partially hydrogenated oils as in margarine, shortenings and vegetable oils are altered fat substances which are known to be detrimental to health because they interfere with normal biochemical processes. These oils have been shown to increase cholesterol, decrease beneficial high-density lipoprotein (HDL) interfere with our liver's detoxification system, and interfere with essential fatty acid function. Dr. Willett at Harvard has shown they cause a 53% increase in coronary heart disease, In September, 1998, The American Heart Association issued a health warning to avoid foods containing these oils. Diabetes type II, cell inflammation and autoimmune problems have been linked to these oils. * Read my column, Hydrogenated Oils-Silent Killers" for in depth details about these oils. Links are provided to more than 125 research studies showing the negative health effects of these oils. Overall, the best diet is the following. Look at your plate. You should have 45% in vegetables, fruits, carbohydrates, 25% in meat proteins and either consuming 30% in good fats or cooking in good oils, etc." Fresh fruits for dessert are fine as long as the fruits are fairly fresh. Publications as varied as the Wall Street Journal, in its 2007 When Buying Organic Makes Sense and When It Doesn't, and Consumers Union, in its 2006 Tips on Buying Organics Without Breaking the Bank, recommend seeking out organic meats when possible.

• Milk. Pesticides and other man-made chemicals have been found in human breast milk, so it should come as no surprise that they have been found in dairy products. While any residues detected have been rare, and of low concentration, milk is of special concern because it is a staple of children's diets. Organic dairies cannot feed their cows with grains grown with pesticides, nor can they use antibiotics or growth hormones like rGBH or rbST.

• Coffee. Many of the beans you buy are grown in countries that don't regulate use of chemicals and pesticides. Look for the Fair Trade Certified Organic label on the coffee package or can; it will give you some assurance that chemicals and pesticides were not used on the plants. It will also mean that fair prices were paid for the end product in support of the farm and that farm workers are treated fairly.

• Peaches. Multiple pesticides are regularly applied to these delicately skinned fruits in conventional orchards. Can't find organic? Safe alternatives: watermelon, tangerines, oranges and grapefruit.

• Apples. Scrubbing and peeling doesn't eliminate chemical residue completely so it's best to buy organic when it comes to apples. Peeling a fruit or vegetable also strips away many of their beneficial nutrients. Can't find organic? Safe alternatives: watermelon, bananas and tangerines.

• Sweet bell peppers. Peppers have thin skins that don't offer much of a barrier to pesticides. They're often heavily sprayed and victim to pesticides commonly used to keep them insect-free. Can't find organic? Safe alternatives: green peas, broccoli and cabbage.
• Celery. Celery has no protective skin, which makes it almost impossible to wash off the chemicals that are used on conventional crops. Can't find organic? Safe alternatives: broccoli, radishes and onions.

• Strawberries. If you buy strawberries out of season, they're most likely imported from countries that use less-stringent regulations for pesticide use. Can't find organic? Safe alternatives: blueberries, kiwi and pineapples.

• Lettuces. Leafy greens are frequently contaminated with what are considered the most potent pesticides used on food. Can't find organic? Safe alternatives: cabbage, cauliflower and Brussels sprouts.

• Grapes. Imported grapes run a much greater risk of contamination than those grown domestically. Vineyards can be sprayed with different pesticides during different growth periods of the grape, and no amount of washing or peeling will eliminate contamination because of the grape's thin skin. Can't find organic? Safe alternatives: blueberries, kiwi and raspberries.

• Potatoes. America's popular spud ranks high for pesticide residue. It also gets the double whammy of fungicides added to the soil for growing. Can't find organic? Safe alternatives: eggplant, cabbage and earthy mushrooms.

• Tomatoes. A tomato's easily punctured skin is no match for chemicals that will eventually permeate it. Can't find organic? Safe alternatives: green peas, broccoli and asparagus.



Buying Organic - Part 2

WASHINGTON - If you're concerned about food safety, you probably already look for organic produce at the supermarket. But if you can't always buy organic, you can still dramatically lower your family's exposure to chemical pesticides by choosing the least pesticide-contaminated fruits and vegetables with the Shopper's Guide to Pesticides in Produce. http://www.foodnews.org/

The Shopper's Guide is a handy, wallet-size card that lists the "Dirty Dozen" most contaminated fruits and vegetables, as well as the 12 most "Consistently Clean" items. Buying Organic
The Shopper's Guide was developed by Environmental Working Group (EWG), based on the results of nearly 43,000 tests for pesticides on produce by the Department of Agriculture and the Food and Drug Administration between 2000 and 2004. EWG's computer analysis found that consumers could cut their pesticide exposure by almost 90 percent by avoiding the most contaminated fruits and vegetables and eating the least contaminated instead.

Eating the 12 most contaminated fruits and vegetables will expose a person to about 15 pesticides a day, on average. Eating the 12 least contaminated will expose a person to fewer than 2 pesticides a day.
"Federal produce tests tell us that some fruits and vegetables are so likely to be contaminated with pesticides that you should always buy them organic," said Richard Wiles, EWG's senior vice president. "Others are so consistently clean that you can eat them with less concern. With The Shopper's Guide in your pocket, it's easy to tell which is which."

EWG's analysis of federal testing data found:

* Peaches and apples topped the "Dirty Dozen" list. Almost 97 percent of peaches tested positive for pesticides, and almost 87 percent had two or more pesticide residues. About 92 percent of apples tested positive, and 79 percent had two or more pesticides. The rest of the "Dirty Dozen" include sweet bell peppers, celery, nectarines, strawberries, cherries, pears, imported grapes, spinach, lettuce, and potatoes.

* Onions, avocados, and sweet corn headed the "Consistently Clean" list. For all three foods, more than 90 percent of the samples tested had no detectable pesticide residues. Others on the "Consistently Clean" list include pineapples, mango, asparagus, sweet peas, kiwi, bananas, cabbage, broccoli, and papaya.

There is growing scientific consensus that small doses of pesticides can adversely affect people, especially during vulnerable periods of fetal development and childhood when exposures can have long lasting effects. Because the toxic effects of pesticides are worrisome, not well understood, or in some cases completely unstudied, shoppers are wise to minimize exposure to pesticides whenever possible.

While washing and rinsing fresh produce can reduce levels of some pesticides, it does not eliminate them. Peeling also reduces exposures, but valuable nutrients often go down the drain with the peel. The best option is to eat a varied diet, wash all produce, and choose organic when possible to reduce exposure to potentially harmful chemicals.

Although The Shopper's Guide only measures pesticide residues on produce, buying organic also makes sense if you're concerned about bacterial contamination. Organic farmers meet all the sanitation standards required of conventional growers and, on top of that, meet tight restrictions on the use of compost and other organic material that do not apply to conventional fruit and vegetable growers.

Although the article above mentions only red meat and processed meat, below you will find the fascinating biography of the fittest woman in America, Ruth Heidrich, Ph.D and how eating chicken and fish impacted her health. In spite of being super fit and an Olympic Gold Medalist, she got cancer in 1982 while eating no red meat, but instead eating chicken and fish. When she eliminated those two foods and dairy from her diet and increased her intake of fruits and vegetables, her CANCER DISAPPEARED, and she has been cancer-free for over 20 years. She never received even a single dose of chemo or radiation. Today, at age 67, she runs an average of 70 races per year! I bet my friend, Sharon Sutton, could keep up with Ruth in her wheelchair! Sharon has also been cancer-free for 26 years after changing to a primarily vegan diet, in spite of the fact that she was given only 30 days to live with inoperable cancer! Now that's living proof!

To God be the glory! He gave us the key to disease prevention and healing thousands of years ago:

I'm right in the trenches with everyone else struggling to keep meat consumption down. I still crave cheeseburgers and will eat one about once a month and maybe chicken and fish monthly also (never mind my cheese and pizza cravings, which I give into on occasion and pay for it with a temporary decrease in health). But that's a far cry from where I was a couple of years ago eating meat about 2 times per week and cheese daily while suffering with my zillion diseases and illnesses. Almost two years ago, God gave me a new body to go along with the new diet program, and I will forever be grateful! I am almost 43 and walking in freedom from the bondage of weight and disease for the first time in my life (yes, I was chubby and sick as a kid and throughout much of my adulthood). Praise Jesus for a changed life physically as well as spiritually! It's never too late, as long as you're still breathing, to find spiritual, emotional and physical freedom through Jesus Christ!

Dr. Heidrich is a six-time Ironman Triathlon finisher, holder of more than 900 gold medals from every distance from 100 meter dashes to 5K road races to ultra marathons and triathlons. She has completed more than 60 marathons all over the world, including Boston, New York, Moscow, and has held 3 world fitness records in her age group at the famed Cooper Clinic in Dallas, Texas. She also was named one of the "Top Ten Fittest Women in North America" in 1999.

She is the author of Senior Fitness, A Race For Life, The CHEF Cook/Rawbook, several videos and co-host of a weekly talk show, Nutrition & You on KWAI, Honolulu, Hawaii.

She is a graduate of UCLA and holds a Master's degree in Psychology, and a doctorate in Health Education. She has also taught in this field at the University of Hawaii.

As of the year 2007, she has been vegan for 25 years and a daily runner for 39 years.

She runs an average of 70 races per year, has a Master's degree in Psychology, a PhD in Health Management, holds two world records in fitness, is the author of two books, and is the co-host of a radio show. As if that wasn't enough, she is also an eight-time Senior Olympic gold medalist.

Who in the world are we talking about? None other than Hawaii's own 67-year-old, Ruth Heidrich. Leave no doubt in your mind: this senior can kick your butt.

She actively participates in track events, road races, and triathlons, and is a 20-year survivor of breast cancer. She attributes a great deal of her success to her strict vegan diet. (For those of you carnivores. vegan means no meat. no eggs, no milk...no animal products or by-products ...and yes, fish is considered an animal).

"When I was 47 and working on my PhD, I was diagnosed with breast cancer," said Heidrich in a recent interview with the Maui Weekly. "Of course, I was devastated. I felt betrayed by my body. I mean, here I was, the most physically fit person that I knew (I had been an active runner for about 14 years) and I had cancer. It was unbelievable."

Heidrich underwent surgery to have the malignant lump removed. Unfortunately, further testing showed that the cancer had already spread. "The doctors found hotspots in her bones and also a lesion in her lung.

Heidrich decided to do what was at that time the unthinkable. Instead of receiving even a single dose of chemo or radiation, she put her faith and ultimately her life into the hands of Dr. John McDougall.

At that time, McDougall was researching the effects of a vegan diet on breast cancer. He put Heidrich on a vegan diet and monitored her. To make a long story short, Heidrich has never undergone any type of conventional cancer treatment and has been cancer-free for 20 years.

"My body actually encapsulated the lesion in my lung," she said. "It's great what your body can do with the right type of nutrition."

There are no ifs, ands or buts about it. The decision to go vegan changed Heidrich's life. She has authored the book and video, "A Race For Life' and also wrote "The Race For Life Cookbook", a guide to cooking delicious and healthy food for optimum health and nutrition.


Recently Heidrich came to Maui to talk about reversing the aging process and improving athletic performance. The free event was sponsored by the Vegetarian Society of Hawaii.

Heidrich explained that Americans tend to think they need a lot more protein than they actually do. And according to her, too much protein, primarily animal protein can lead to big trouble. "I've seen people die from the 'all protein'-meat' diet," she said. "People are always talking about their cholesterol. Well, cholesterol is in animal protein. Animal protein can lead to and aggravate arthritis, osteoporosis and of course, heart disease."

For those of you out there who have osteoporosis, you've probably been told by your doctor to eat more protein, like fish, and participate in some sort of exercise that will help to rebuild your bones.

Heidrich said that the recommendation to consume animal protein to help rebuild bone is misinformation. "When you eat four ounces of fish," she explained, "your body goes into an acidic state. Your body cannot function or live in this state so it needs to balance out again."

You know how when you get indigestion, you take a Tums? It's a calcium tablet. Calcium is an alkaline that counteracts the acid to make your tummy feel better again. It works the same way with the Ph levels of your blood. "Your body will actually pull more calcium out of your bones to buffer the protein that you ingested from the fish." she said, the last thing that you need when dealing with osteoporosis is more calcium being pulled from your bones."

Heidrich is a living example that the right diet can make all the difference. One of China's oldest stories about the health benefits of consuming natural foods is goji berry's reputation ("wolfberry", Lycium barbarum L.) for preserving vision well into old age, even for many centenarians. Traditional Chinese medicine has been using goji for this purpose over some 20 centuries (3,6)

Goji, an English contraction of the Mandarin name, gǒuqǐ (pronounced "goo-chee" for wolfberry), is renowned for its nutrient density, containing numerous essential vitamins, minerals and phytochemicals that may support ocular health. Among them are nutrients sufficiently established as valuable to vision that they have been assessed in NIH-sponsored clinical trials and now are ingredients of commercial supplements - essential vitamins A, C and E, the essential mineral zinc, and carotenoids, beta-carotene, lutein and zeaxanthin (1,5)

A nutritional wonder of nature, the goji berry contains all of these eye health nutrients and more. In this essay, we'll cover a dozen goji nutrients, where modern scientists are just beginning to verify what ancient Chinese shamans have practiced for centuries - goji may be nature's most complete eye healthfood.

Where can you buy goji berries? There are numerous websites selling products under the goji or wolfberry name. Choose dried berries that are the largest and reddest, have moisture content similar to raisins, and come from the goji berry capital of China, Ningxia (7).

Eye health nutrients

Most of what we know about specific nutrients that affect eye health comes from clinical trials on patients with age-related eye diseases, given the acronym AREDs. This ongoing series of clinical trials is sponsored by the US National Eye Institute, a division of NIH, and conducted by ophthalmologists across the United States and Canada (1).

The main nutrients identified in the first AREDs reports were the antioxidant vitamins A, C and E combined with high doses of zinc and the carotenoid, beta-carotene (a pro-vitamin A compound converted to vitamin A upon digestion). Since then, further research not yet completed is considering food-derived carotenoid pigments found in the human retina - zeaxanthin and lutein - and other essential nutrients and antioxidant chemicals ingested via plant foods. (The term "essential" has two meanings: 1) the nutrient is essential to health, and 2) it is not made by the body so is essential that we obtain it via food intake.)

A Dozen Friends of Eye Health

All the following nutrients are present in goji berries. Data sources are from two recently published books (3,6).

1-3. Antioxidant vitamins A-C-E. Vitamin A, formed from precursors called retinol (from dairy products) or retinal (from plant carotenoids like beta-carotene present in goji), serves antioxidant, filtering and immune functions in the eye. Vitamins C and E are, respectively, water-soluble and lipid-soluble antioxidants that become resident in the eye with a variety of protective functions against oxidative and intense light stress. Goji berries are an exceptionally good source of vitamin C (29 mg/100 g dried fruit, approx. 30% of the US Dietary Reference Intake, DRI) (3).

4. Zinc. As a cofactor for numerous enzymes, some of which play antioxidant roles, zinc can be viewed as a complementary element guarding eye health. Its precise role especially in age-related macular degeneration is not yet defined, but it is nonetheless included as one of the AREDs nutrients currently under clinical study. Zinc content per gram in goji berries (2 mg/100 g, 20% DRI) is high among edible plants (3).

5-6. Zeaxanthin and lutein. Almost identical in chemical structure, these two carotenoids present in green, orange, red and yellow plant foods are selectively absorbed from the blood by the retina. They are deposited in a retinal compartment called the macula lutea where scientific studies have proved a light-absorbing filter role against intense sunlight and an antioxidant role against reactive oxygen species. Goji berry is one of nature's richest sources of zeaxanthin (162 mg/100 g; there is no DRI for this nutrient) (3).

7-8. Beta-carotene and lycopene. Not only a precursor to vitamin A formation, beta-carotene also serves as a potent antioxidant source that seeks fat layers for storage. This has significance to eye protection, as the neural elements of the retina are lined with fatty sheaths where antioxidant protection is needed. Usually associated with tomatoes (a botanical relative of the goji berry), lycopene provides antioxidant functions. Beta-carotene and lycopene contents in goji berries are exceptional among edible plants (7.4 mg and 1.4 mg/100 g, respectively) (3,4,6).

9-10. Magnesium and selenium. Although the research is preliminary at present, there is evidence that magnesium and selenium, essential minerals with rich contents in goji berries (109 mg and 50 mcg/100 g; 30% and 97% DRI, respectively), participate as cofactors in retinal antioxidant reactions (3).

11. Riboflavin (vitamin B2). Like other B vitamins, riboflavin supports energy production by aiding the metabolism of carbohydrates, fats and proteins. It has not been conclusively proved that riboflavin serves a health function in the eye. Recent research has shown, however, that riboflavin is associated with nutrition of collagen fibrils affected by cataracts and keratoconus, a degenerative corneal disease. Goji berries have among the highest riboflavin content per gram in nature (1.3 mg/100 g or 100% DRI) (3).

12. Phenolics. These chemicals from colorful plants are pigments with a great diversity of chemical structures and names. They are the main dietary antioxidants in foods Americans eat, and so likely contribute to eye health in ways not yet clear from modern research. In goji berries, phenolic concentration is particularly enriched (total phenolics of 1309 mg/100 g), with preliminary evidence that the phenolic well-known in red raspberries - ellagic acid - is also localized in goji fruit (86 mg/100 g) (6).

Although it will take years for modern science to unravel the eye health nutrients in goji berries, we have enough evidence already by knowing that these dozen nutrients are involved in supporting vision and overall health (1,2,5).

Our choice is to involve plant foods containing these nutrients in our diets, whether by using goji berries or other colorful plants foods with similar nutrient characteristics (2,6).

Mangosteen Help for Glaucoma

The natural treatment for glaucoma is basically the same as that for any other medical condition associated with high toxicity and is primarily focused on preserving residual vision. Mangosteen is increasingly growing in popularity among patients with glaucoma because of its proven benefits. Among the notable components found in mangosteen are compounds called xanthones, of which more than 40 types have been found in the fruit's rind. They are powerful anti-oxidants that protect the delicate structures in the eyes from free radical damage. As such, xanthones improve visual acuity and help in the battle againstglaucoma and other eye problems such as cataracts and age-related macular degeneration.

Since glaucoma has no known cure and symptoms may only manifest during the advanced stages when significant visual loss has already occurred, it would be wise to consider taking early and regularly in order to protect the eyes and avoid running the risk of developing glaucoma later in life. Consumer Reports purchased 15 protein powders and drinks and tested multiple samples of each for arsenic, cadmium, lead, and mercury. Levels in several of the products could, with just three servings a day, result in daily exposure to arsenic, cadmium, or lead exceeding USP limits.

The protein shakes tested by Consumer Reports are frequently used by not only body builders, but also "regular folks," including some pregnant women, who use them as meal replacements to lose weight and increase muscle mass.

Unfortunately, some of these products turn out to be significantly contaminated with heavy metal toxins such as arsenic, cadmium, lead and mercury.

Of the 15 protein drinks tested, three of them contained very worrisome levels of arsenic, cadmium and lead.

Which Protein Drinks Fared the Worst?
Three daily servings of the ready-to-drink liquid EAS Myoplex Original Rich Dark Chocolate Shake contained an average of:

16.9 µg (micrograms) of arsenic
5.1 µg of cadmium
The proposed United States Pharmacopoeia's (USP) limits for these two toxins are 15 and 5 µg respectively.

The worst of the products tested was Muscle Milk Chocolate powder, which contained all four toxic metals; three of them at the highest levels of all products tested. Three daily servings of this particular brand and flavor contained an average of:

5.6 µg cadmium
13.5 µg of lead
12.2 µg of arsenic
0.7 µg of mercury
Muscle Milk's Vanilla Crème contained slightly less lead, but still exceeded the USP lead limit of 10 µg.

A fourth product, Muscle Milk's liquid Nutritional Shake Chocolate, also tested high in arsenic, providing you with an average of 14.3 µg of arsenic per day, which is very close to the USP limit.

Clearly, getting a potentially toxic dose of heavy metals with your daily protein drink is not what you had in mind, but based on these results, that may indeed be what you're getting...

Arsenic and Cadmium
Arsenic and cadmium appear to be the most problematic here, as the levels of these two compounds in some cases exceeded maximum "safe" limits. However it's worth noting that, ideally, you don't want to ingest these toxins at ANY level, as even low-dose exposure can contribute to lingering health problems.

Various toxins can also act together synergistically, creating even more potent, damaging effects.

Exposure to low levels of arsenic can cause nausea and vomiting, decreased production of red and white blood cells, abnormal heart rhythm, damage to blood vessels, and a sensation of "pins and needles" in your hands and feet. Long-term exposure has been linked to cancer of the bladder, lungs, skin, kidney, nasal passages, liver and prostate.

Cadmium is also a known human carcinogen. It damages DNA and also disrupts a DNA repair system that helps to prevent cancer.

According to ABC News, cadmium also "raises special concern because it accumulates in and can damage the kidneys... and it can take 20 years for your body to eliminate even half the cadmium absorbed today."

It's important to realize that toxic metals such as the ones discussed here typically accumulate in your body over time where they can cause irreparable damage. Further damage can be prevented by using various detoxing methods to remove the metals, but this can be a slow, difficult process.

Prevention is clearly your best defense when it comes to protecting yourself against heavy metals and other toxins.

In 2008, U.S. bottled water consumption reached nearly 9 billion gallons, raking in revenues of more than $11 billion.

Are You Paying 1,900 Times More for Unhealthy, Earth-Damaging Water?
If you drink bottled water, yes, you are!

Bottled water typically costs more than $1.50 per bottle, which is 1,900 times the price of tap water.

Yet, that very same bottled water that you're paying a premium for is, in about 40 percent of cases, simply bottled tap water, which may or may not have received any additional treatment.

On top of that, most municipal tap water must actually adhere to more strict purity standards than the bottled water industry. Further, while the EPA requires large public water supplies to test for contaminants as often as several times a day, the FDA requires private bottlers to test for contaminants only once a week, once a year, or once every four years, depending on the contaminant.

An independent test performed by the Environmental Working Group revealed 38 low-level contaminants in bottled water, with each of the 10 tested brands containing an average of eight chemicals including disinfection byproducts (DBPs), caffeine, Tylenol, nitrate, industrial chemicals, arsenic, and bacteria were all detected.

So what you are paying for is often no different, or even worse, than the water that comes out of your faucet.

When you factor in other elements, like the chemicals that can leach from the plastic bottle and its impact on the environment, bottled water becomes a losing proposition no matter how you look at it.

Drinking From Plastic Bottles is Not a Wise Health Move
When drinking bottled water you need to think not only about the water but also about the bottle itself. Plastic is not an inert substance as its manufacturers would like you to believe. It contains chemicals like BPA and phthalates, which mimic hormones in your body.

Even tiny concentrations can cause problems such as:

Structural damage to your brain
Hyperactivity, increased aggressiveness, and impaired learning
Increased fat formation and risk of obesity
Altered immune function
Early puberty, stimulation of mammary gland development, disrupted reproductive cycles, and ovarian dysfunction
Changes in gender-specific behavior, and abnormal sexual behavior
Stimulation of prostate cancer cells
Increased prostate size, and decreased sperm production
Anytime you drink from a plastic bottle you risk exposure, but if you leave your bottle of water in a hot car or reuse it, your exposure is magnified because heat and stress increase the amount of chemicals that leach out of the plastic.

Plastic is Hurting the Earth in a Major Way
About 1.5 million tons of plastic are used to manufacture water bottles each year around the world, and the processing itself releases toxic compounds like nickel, ethylbenzene, ethylene oxide and benzene. Further, according to the Sierra Club, the U.S. alone uses 1.5 million barrels of oil to make plastic water bottles, the majority of which then end up in landfills.

In fact, 1,500 water bottles are thrown away every second!

This massive waste is one reason why there is now a plastic "stew" twice the size of Texas swirling through the Pacific Ocean.

Also extremely harmful to the environment is the way corporations are pumping water from underground aquifers. These natural springs serve as water sources for nearby streams, wells and farms, but the aggressive pumping can easily dry them out prematurely.

A Simple Solution is at Your Disposal
One you realize that many sources of bottled water is:

No safer than tap water
Extremely expensive
Often contaminated by plastics chemicals

... the choice to stop using it becomes simple. Fortunately, the alternative to having pure water is also simple: filter your own at home.


Unfiltered Tap Water is NOT Better than Bottled Water!!

My favorite filter is a reverse/osmosis filter as it will remove virtually all of the pollutants, such as disinfection by products, fluoride, arsenic, lead, drugs in the water supply, rocket fuel, bacteria, viruses, you name, it removes it. Unfortunately the down side is that it also removes minerals that should be in there. Fortunately the solution is quite simply. Add some high quality salt, like Himalayan salt, about 1/4 teaspoon for gallon.

I currently use a R/O system that is not yet commercially available. It is a tankless system in which I fill a glass container directly that is easy to clean. This eliminates the stagnant water in the holding tank and inevitable mold/slime contamination with using a R/O system with a holding tank. We hope to bring this to system to market in the next year.

Additionally the filtering process damages the structure of the water. A simple way to restructure the water would be to create a vortex. You can do this by putting a large spoon in the container and swirling it around very fast for awhile. This will clearly start to restructure the water. Getting the water cold, down to about 4 degrees Centigrade or 39 degrees Fahrenheit will also work. The best way to do that would be to store your bottle outdoors in the winter (when it doesn't go below 39 F) or put the bottle on your cement garage floor at night and the earth will remove much of the heat from the bottle. Store the water in a cool area.

You could cool the water in a refrigerator but that would impart negative EMF into the water so it is less than ideal. Similarly there are vortex machines you can purchase for about $500 but they will also impart these EMFs into the water.

This enables you to rely on your own well or municipal source for safe, clean water. If you need to take some with you on the road, store it in a glass jar or bottle.



What is the BEST Water in the World?
There is no question in my mind that the absolute finest source of water in the world is NOT from an artesian well but from a gravity fed mountain spring that is obtained directly from where it has come out of the earth. It is filtered by the earth and structured and it is also not pasteurized or heated like nearly all commercial bottled waters. You see there are living organisms in water like algae that are actually beneficial for us but when you heat the water, just like pasteurizing milk, you damage it.

So you are probably wondering the best way to find a gravity fed raw spring.

Well fortunately there is a web site called Find a Spring.com which allows you to do so. The website also allows you to add a spring that is not currently in the database. You can include information about the spring's temperature and location, and insert pictures or videos you took of the spring. Relax if you don't live near a mountain though as just about any spring is better than all other available options. So if you are at sea level just use that local spring. Typically they are monitored by the local municipalities for contaminants.

It is an awesome resource and I strongly encourage you, your family and your friends to use it. Please pass this gem along. There is a strong likelihood there is a spring within one hour of your home. Most of these springs are FREE, that is right, the best water in the world and there is NO CHARGE for it. You can easily store ten five gallon jugs in most cars and it is a wonderful opportunity for you to regularly escape from the city get out in nature.

If you don't have the large water bottles you can easily find them online. Glass would be best but if you use those, it would be better to get the three gallon jars as the five gallon ones are too large and can easily break and you can hurt yourself. You can also find corks to stop the bottles at most hardware stores. Just bring the bottle in with you so it fits properly.

If you do choose glass just make sure you wrap the bottles in your car with some blankets or towels so they don't bang against each other and break.

In my mind getting fresh raw spring water is one of the more powerful, inexpensive and phenomenal lifestyle adjustments you can make and I would strongly encourage you to try it.
