The Standard American Diet (SAD) — the diet most Christians consume each and every day of their life — is without any doubt, “The World’s Diet”. I can boldly make this statement because it stands in sharp contrast to what God told us we should eat:
“And God said, Behold, I have given you every herb bearing seed (vegetable), which is upon the face of all the earth, and every tree in the which is the fruit of a tree yielding seed; to you it shall be for meat (food).”
(Genesis 1:29)
Fruits, vegetables, seeds, and nuts are the foods God tells us we should eat and they are found exclusively in the garden. No question about it, these are the only foods God tells us we should nourish our bodies with!
But man has chosen to go outside of the garden to obtain his food.
These foods are what Hallelujah Acres refers to as the SAD diet. So if the SAD diet is not “God’s Diet”, whose diet is it? Rhonda likes to call it “Satan’s Alternative Diet” (SAD), because it is in such stark contrast to what God told us we should eat in Genesis 1:29.
Thus the Standard American Diet clearly qualifies for not only being called the “World’s Diet” but also “Satan’s Diet”.
Does the Bible have anything to say about this “World’s SAD Diet” and “Satan’s Alternative Diet”? Absolutely!
Be Not Conformed To This World
“And be not conformed to this world: but be ye transformed by the renewing of your mind that ye may prove what is that good, and acceptable, and perfect, will of God.”
(Romans 12:2)
Now some might question that this verse in Romans 12:2 has anything to do with what we eat and how we nourish our physical bodies, so I will now quote the verse that precedes it to see if this verse sheds any light on what is being referred to here:
“I beseech you therefore, brethren, by the mercies of God, that ye present your bodies a living sacrifice, holy, acceptable unto God, which is your reasonable service.”
(Romans 12:1)
Clearly, Romans 12:2 is directing these instructions to Christians (“brethren”) and is clearly referring to what we have just read in Romans 12:1, because the very first word in Romans 12:2 is the word “And”, which means it is continuing instruction regarding how we are to “present our bodies . . . acceptable unto God.”
There are numerous “so called” nutritional authorities in our society today, some even claiming to be Christian, who promote a diet that includes foods found outside the garden (animal source foods in particular).
What does God have to say about our physical bodies and the teachings of these “so-called” nutritional authorities?
“Know ye not that ye are the temple of God, and that the Spirit of God dwelleth in you? If any man defile the temple of God (by placing into it harmful substances), him shall God destroy; for the temple of God is holy, which temple ye are. Let no man deceive himself. If any man among you seemeth to be wise in this world, let him become a fool, that he may be wise. For the wisdom of this world is foolishness with God.”
(1 Corinthians 16-19)
The Standard American Diet – Analyzed
This week I want to begin an analysis of this “world’s diet” which I will refer to as the Standard American Diet (SAD) for the remainder of this article.
But this diet is more than just the Standard American Diet…
…it’s the Standard Canadian Diet.
…the Standard Australian Diet.
…the Standard South African Diet, etc.
In fact, this SAD diet is basically the same diet consumed in most western nations and even many non-western nations today.
This is why there is little difference in the health of the people who adopt this diet no matter what country they live in.
So what’s wrong with the SAD diet?
Why is it so dangerous and destructive to our health?
Let’s start with fiber.
SAD Diet Is A Fiberless Diet
God designed our bodies to function optimally on a diet that contains foods very high in fiber content. This may come as a shock to you, but the SAD diet is almost totally void of any fiber, while the “GOD” diet (God’s Original Diet, Genesis 1:29) is extremely high in fiber.
In fact, garden foods are the only foods that contain fiber.
Fiberless Diets Cause Constipation
Constipation is a serious issue for an extremely high percentage of those on the world’s SAD fiberless diet.
Eighty percent of all Americans experience constipation problems at one time or another and some experience chronic constipation. The reason: – without fiber, peristalsis is seriously hindered.
Peristalsis is the contraction and relaxation of muscles which propel food contents by means of waves through the gastrointestinal tract.
On the SAD fiberless diet, lack of fiber hinders peristaltic movement of the food through the digestive tract. That is why doctors recommend laxatives for a person experiencing constipation problems, while others encourage adding daily fiber to compensate for the fiberless diet they are consuming.
God’s Original Diet (GOD), the one God told us we should all consume in Genesis 1:29, is loaded with fiber. When a person converts from the world’s SAD diet to GOD’s diet, constipation problems almost always cease and as long as they stay on the GOD diet, they will not experience constipation ever again.
There Is More To Learn About Fiber
Between where food enters our body at the mouth and where it exits the body as feces, it must pass through approximately 30 feet of tubing. This tubing (the digestive tract) has many pockets, loops, and bends.
To move food rapidly without putrefying requires fiber. When a person consumes a diet comprised exclusively of fiber-rich garden source foods, like The Hallelujah Diet, the food moves very rapidly through the digestive tract, completing the 30-foot journey in about 16-20 hours.
In contrast, foods that are devoid of fiber move very sluggishly through that 30-feet of tubing, taking up to 3-4 days to exit.
Foods that are lacking fiber would include almost everything the average person on the SAD diet consumes each and every day.
For instance, all animal source foods (including flesh and dairy) contain absolutely no fiber.
All refined grains, including refined flour, refined white and brown table sugars, table salt, etc. are devoid of fiber.
SAD-ly, these are the foods that comprise the majority of the world’s diet.
Carnivorous Animal’s Intestinal Tract Compared To Humans
The length of the human digestive tract is approximately three times longer than that of a carnivorous animal and consists of many pockets, loops and bends.
A carnivorous animal’s intestinal tract is very smooth and without any pockets, loops, or bends.
There is a reason for this great difference.
When consumed by a carnivorous animal, the fiberless, unchewed chunks of raw flesh pass quickly into a very strong solution of hydrochloric acid where the flesh is broken down into a form the animal can utilize for its nutritional needs.
The waste is rapidly eliminated before it has opportunity to putrefy.
When humans consume animal flesh, because it contains no fiber, it moves very sluggishly through our 30-foot-long digestive tract, complete with its pockets, loops, and bends.
It can take as long as 3-4 days for animal flesh to make the journey through the human body!
Something worth noting here is the internal temperature of the human physical body – is 98.6 degrees Fahrenheit.
Raw Hamburger At 100 Degrees
If you left a pound of ground beef on your kitchen counter, cranked the thermostat to 100 degrees, closed the kitchen door and left for 3 to 4 days, you would return to discover a terrible odor.
What do you think could be causing that terrible odor?
It is the odor of the putrefying and rotting flesh that has been sitting in that 100 degree temperature for the previous 3-4 days.
If flesh putrefies and rots on the kitchen counter in a 100 degree atmosphere, what do you think animal flesh does on its 3 to 4 day journey through your digestive tract at the same temperature?
It putrefies! And the stench escapes through the pores in your skin — most people do not realize that the body odor they are experiencing is the end result of placing flesh foods into their body.
Incidentally, this editor has had no need of a deodorant since he stopped consuming animal flesh 36 years ago.
Consuming animal flesh produces many other problems besides body odor.
Almost all digestive tract problems are the result of consuming fiberless animal flesh foods – diverticulitis, diverticulosis, crohn’s disease, colitis, ulcerative colitis, Irritable Bowl Syndrome (IBS), and even colon cancer.
And a person who tries to be careful about consuming only grass fed, organically grown animal flesh has the same potential of developing these intestinal problems, because organic flesh is just as lacking in fiber and dangerous as commercially grown flesh.
By contrast, it is almost impossible for a person on a 100% plant based diet to experience any of these animal flesh related problems.
How Human Digestion Works
God’s plan for the proper nourishment of the human physical body is the consumption of plant-sourced foods.
When plant-based, fiber-rich foods move through the human body’s 30-foot digestive tract, they digest quickly (in 30 to 90 minutes). Propelled by the fiber, these foods complete their digestive journey in just 16-20 hours.
The most dangerous diets today are low carb, high protein diets. Some justify this type of diet using Genesis 9:3 as proof that God “changed” his mind about man’s diet after the flood, allowing him to eat foods of animal origin.
But was the animal flesh allowance in Genesis 9:3 meant to supersede God’s original diet in Genesis 1:29?
Note that the Genesis 9:3 diet was given only after all plant foods had been destroyed by the flood in Genesis chapter 7 and notice particularly verse 19:
“And the waters prevailed exceedingly upon the earth; and all the high hills, that were under the whole heaven, were COVERED.” (Genesis 7:19) “And the waters prevailed upon the earth an hundred and fifty days.” (Genesis 7:24)
I personally believe that Genesis 9:3’s allowance of flesh foods was only for survival purposes because all plant source foods had been destroyed by the flood.
I do not believe that Genesis 9:3 was meant as new instruction as to how man was to nourish his body — just look at all the great harm animal source foods cause the human body.
Dr. T. Colin Campbell, in his book, “The China Project” concludes, after the most comprehensive research project ever undertaken by the scientific community on the relationship of diet to disease:
“Only small intakes of animal products were associated with significant increases in chronic degenerative disease.”
Another book containing incredible scientific documentation showing the dangers of animal source foods is John Robbins’ book, “Diet for A New America”.
And then there is Dr. Joel Fuhrman’s book, “Eat to Live”. Dr. Fuhrman, using a basically raw plant foods diet and the elimination of all animal source foods, is seeing almost 100% of his 5,000 annual patients healed of whatever physical problems they were experiencing.
Here at Hallelujah Acres we have received tens-of-thousands of testimonies from people who eliminated all animal source foods and adopted a 100%, predominately raw, plant-based diet, reporting they have recovered from over 170 different physical problems, including diverticulitis, diverticulosis, crohn’s disease, colitis, ulcerative colitis, Irritable Bowl Symptom (IBS), and even colon cancer.
Note: Because raw vegetables irritate the colon lining and often complicate colon issues, those with such issues have found that by juicing veggies (which removes the irritating fiber), they are able to obtain the nutrients necessary for rebuilding the colon wall without causing further irritation. During this healing process, cooking these vegetables softens the fiber and prevents the irritation raw veggies cause.
Isn’t it about time churches and the Christian community in general stopped promoting the world’s diet and returned to the “GOD” Diet – God’s Original Diet?
If this would happen, we could almost totally eliminate prayers for physical healing of disease within the church and we could devote those prayers to the saving of the lost. Also, all the money saved trying to recover from these diseases could provide more money to support missions.

If we are going to restore our health “God’s way” we must stop nourishing our body’s the “world’s way”.
For the first 42 years of my life I nourished my body the “world’s way.” As a result, I suffered numerous physical problems, culminating with colon cancer at age 42.
After being told I had cancer, I stopped nourishing my body the world’s way and began nourishing my body God’s way on the advice of evangelist Lester Roloff.
The result: My cancer quickly disappeared, without any medical intervention, and I stopped getting sick.
It has been 36 years since I stopped nourishing my body the world’s way and I am still experiencing excellent health only a few years from my 80th birthday.
I have already outlived both my parents by 13 years (they both ate the world’s diet) — and I am only five years from outliving my longest living ancestor that I am aware of.
Do I believe it is diet that has and is making the difference? ABSOLUTELY!
What’s Wrong With What People Eat Today
Almost everything a person eats today is contrary to what God designed our physical bodies to be nourished with and what science reveals we should be eating if we want to avoid disease and experience health (read The China Study by Dr. T. Colin Campbell).
Dr. Campbell has done more research on the relationship of diet to disease than any other researcher in history. His book reveals how the world’s diet is the cause of almost every physical problem we experience and how God’s diet, as revealed in Genesis 1:29, will not only prevent sickness but restore health to most who adopt it.
Sadly, Satan’s subtle attacks come in various forms, sometimes even creating confusion among leaders in the alternative health field. These leaders go against abundant scientific research and undeniable clinical experience of Dr. Campbell, Dr. Caldwell Esselstyn, among others. In so doing, they condemn God’s Genesis 1:29 way of nourishing our God created bodies.
In addition to what Dr. Campbell’s research reveals, tens of thousands of people have written me over the past 20 years to report that when they stopped consuming the world’s diet, and began nourishing their bodies God’s way, over 170 different physical problems disappeared and they didn’t get sick anymore.
Are you aware that God wants His children to be in health?
“Beloved, I wish above all things that thou mayest prosper and BE IN HEALTH, even as thy soul prospereth.”
(3 John 2)
However, even though it is clear that God wants His people to “be in health” they are not. Here is an example of just how sick our generation is…
Let’s Take A Look At The Health of People Today
Here are some statistics from the Statistical Abstract of the United States, as published by the U. S. Department of Commerce:
Cardiovascular diseases affect 80% of all Americans
33% of all Americans develop cancer
Over 6.5 million Americans suffer with diabetes
77% of the adult population suffers with arthritis and rheumatic disorders
Over 25 million suffer from asthma, bronchitis or emphysema
15 million suffer from ulcers
10 million are migraine sufferers
Over 50% suffer chronic digestive disorders
80 million suffer from allergies
22 million suffer mental illness’
98% have bad teeth and 31 million have no teeth of their own
70% are overweight and 80 million are classified as obese
Nearly 90% of our children cannot pass a minimum physical fitness test
The World’s Diet Is A Weapon of Mass Destruction
Following is an interesting verse in the bible concerning the word “weapon.”
“Wisdom is better than weapons of war.” (Ecclesiastes 9:18)
Most Christians realize that we have an “adversary” whom the Bible refers to as “the devil”:
“Be sober, be vigilant; because your adversary the devil, as a roaring lion, walketh about, seeking whom he may devour.”
(1 Peter 5:8)
One of this adversary’s primary functions is to frustrate and if possible, destroy the work of the Lord.
I personally believe that one of devil’s greatest tools is to weaken and prematurely destroy the physical bodies (temples) of God’s people. He does this so that they cannot effectively do the work of the Lord and fulfill the ministry to which God has called them.
What better way to do this than to get God’s people to consume foods that are harmful to their physical bodies!
If we go back to the book of Genesis, we will see the devil used food as a means of frustrating God’s plan over 6,000 years ago, right there in the Garden of Eden, when Eve ate something God had said should not be eaten:
“And the Lord God commanded the man, saying; Of every tree of the garden thou mayest freely eat: But of the tree of the knowledge of good and evil, thou shalt not eat of it: for in the day that thou eatest therof thou shalt surely die.”
(Genesis 2:16-17)
By eating something God said should not be eaten, sin entered the world, man was banished from the Garden, separated from God, and had to earn his “bread” (food) by the sweat of his brow.”
But God, in His great love, for us provided a means of restoring man to a right relationship with Him through his Son, Jesus Christ:
“But when the fullness of time was come, God sent forth his Son, made of a woman, made under the law, to redeem them that were under the law, that we might receive the adoption of sons. . . . Wherefore thou art no more a servant, but a son, and if a son, then an heir of God through Christ. Howbeit then, when ye knew not God, ye did service unto them which by nature are no gods. But now, after that ye have known God, or rather are known of God, how turn ye again to the weak and beggarly elements, whereunto ye desire again to be in BONDAGE.”
(Galatians 4:4-9)
Christians Are In Bondage To The World’s Diet
The Standard American Diet (SAD) most people consume is the world’s diet, which stands in stark contrast to God’s diet as revealed in Genesis 1:29.
And truly, the world’s diet is a weapon of mass destruction evidenced by the poor health of the Christian community and the constant prayers for the healing by God’s people.
If you are a Christian, you KNOW we have an “adversary” – The Bible refers to our adversary as the “devil” in I Peter 5:8 as referenced above.
But do you realize there is a second part to that verse? It is to this second part of the verse I want to call our attention next: “Whom RESIST steadfast in the faith, knowing that the same afflictions are accomplished in your brethren that are in the world.”
Again, one of the adversary’s primary functions is to frustrate and, if possible, destroy the work of the Lord. We see this all too often when a pastor or missionary or one of God’s servants develops cancer as a result of eating the world’s diet, and then dies after pursuing the world’s medical system in an attempt to restore their health.
Our Physical Bodies Are God’s Temples
One of the devil’s greatest tools is to weaken and prematurely destroy the physical bodies of believers. Are you aware scriptures refer to our body as “the TEMPLE” of the Holy Ghost”?
“What? Know ye not that YOUR BODY IS THE TEMPLE OF THE HOLY GHOST which is in you, which ye have of God, and ye are not your own? For ye are bought with a price: therefore glorify God in your body, and in your spirit, which are God’s.”
(1 Corinthians 6:19)
The Bible also tells us that we should “glorify God in our body . . . .”
Friend, we cannot glorify God in our body when we place things into our body that will destroy it, and that is exactly what the Standard American Diet (SAD) does.
And another thing… If you are a Christian, your body no longer belongs to you, but rather it was purchased by God and became His property when you accepted Him who loved you and gave Himself a ransom for you.
“Who will have all men to be saved, and come unto the knowledge of the truth. For there is one God, and one mediator between God and men, the man Christ Jesus; Who gave himself a ransom for all.”
(1 Timothy 2:4-6)
Now when we “defile the temple” (the physical body) the Bible tells us that there are consequences:
“Know ye not that ye are the temple of God, and that the Spirit of God dwelleth in you? If any man defile the temple of God, him shall God destroy; for the temple of God is holy, which temple ye are.”
(1 Corinthians 3:16-17)
And now for the climax to what I have been trying to say:
“Let no man deceive himself. If any man among you seemeth to be wise in this world, let him become a fool, that he may be wise. For the wisdom of this world is foolishness with God.”
(1 Corinthians 3:17-18)
The Standard American Diet (SAD), the world’s diet, is being used by the devil not only to deceive the believer as to what they should eat, but this same diet is what causes almost every physical and even psychological problem we experience. It is the cause of almost every problem we pray for fellow Christians to be healed of.
This diet is also the very thing that shortens our lives and ministries. It causes so many Christians to leave this world prematurely — before they have completed the ministry God has called them to.
This senseless and unnecessary destruction of the physical bodies of God’s children needs to cease.
Is There Any Hope?
Thirty-six years ago there was a Baptist evangelist in Texas by the name of Lester Roloff who for years had been trying the get Christians and preachers alike to get off the world’s diet and to adopt God’s diet.
His efforts were not appreciated.
In fact his efforts were met with great opposition and ridicule by many fellow preachers.
I knew Brother Roloff and was aware of his efforts to get Christians to change their diets, and I was also aware of the criticism he had received because I had joined in that criticism.
But now I needed help with my cancer and so I turned to Brother Roloff for advice as to how I could get rid of my cancer without drugs, radiation or surgery.
At his advice, I stopped putting the world’s diet into my body, started eating God’s diet, and soon my cancer started to go away.
Within a year my cancer was totally gone.
This healing caused me to do some scriptural research. It wasn’t long before I realized that God had given man a diet in Genesis 1:29.
I like to call it the “GOD” Diet, which stands for “God’s Original Diet”.
Not long after that, God led me to begin a ministry called “Hallelujah Acres” a ministry that teaches health from a biblical perspective.
Today, millions around the world have adopted The Hallelujah Diet which is based on God’s Original (Genesis 1:29) Diet.
As a result of eliminating the world’s diet and adopting God’s diet, tens of thousands around the world have written to report that after making the diet change they have recovered from over 170 different physical and psychological problems and they don’t get sick anymore.

“And the Lord God commanded the man, saying; Of every tree of the garden thou mayest freely eat: But of the tree of the knowledge of good and evil, thou shalt not eat of it: for in the day that thou eatest therof thou shalt surely die.”

By eating something God said should not be eaten, sin entered the world, man was banished from the Garden, separated from God, and had to earn his “bread” (food) by the sweat of his brow.”
But God, in His great love, for us provided a means of restoring man to a right relationship with Him through his Son, Jesus Christ:
“But when the fullness of time was come, God sent forth his Son, made of a woman, made under the law, to redeem them that were under the law, that we might receive the adoption of sons. . . . Wherefore thou art no more a servant, but a son, and if a son, then an heir of God through Christ. Howbeit then, when ye knew not God, ye did service unto them which by nature are no gods. But now, after that ye have known God, or rather are known of God, how turn ye again to the weak and beggarly elements, whereunto ye desire again to be in BONDAGE.”
(Galatians 4:4-9)
Christians Are In Bondage To The World’s Diet
The Standard American Diet (SAD) most people consume is the world’s diet, which stands in stark contrast to God’s diet as revealed in Genesis 1:29.
And truly, the world’s diet is a weapon of mass destruction evidenced by the poor health of the Christian community and the constant prayers for the healing by God’s people.
If you are a Christian, you KNOW we have an “adversary” – The Bible refers to our adversary as the “devil” in I Peter 5:8 as referenced above.
But do you realize there is a second part to that verse? It is to this second part of the verse I want to call our attention next: “Whom RESIST steadfast in the faith, knowing that the same afflictions are accomplished in your brethren that are in the world.”
Again, one of the adversary’s primary functions is to frustrate and, if possible, destroy the work of the Lord. We see this all too often when a pastor or missionary or one of God’s servants develops cancer as a result of eating the world’s diet, and then dies after pursuing the world’s medical system in an attempt to restore their health.
Our Physical Bodies Are God’s Temples
One of the devil’s greatest tools is to weaken and prematurely destroy the physical bodies of believers. Are you aware scriptures refer to our body as “the TEMPLE” of the Holy Ghost”?
“What? Know ye not that YOUR BODY IS THE TEMPLE OF THE HOLY GHOST which is in you, which ye have of God, and ye are not your own? For ye are bought with a price: therefore glorify God in your body, and in your spirit, which are God’s.”
(1 Corinthians 6:19)
The Bible also tells us that we should “glorify God in our body . . . .”
Friend, we cannot glorify God in our body when we place things into our body that will destroy it, and that is exactly what the Standard American Diet (SAD) does.
And another thing… If you are a Christian, your body no longer belongs to you, but rather it was purchased by God and became His property when you accepted Him who loved you and gave Himself a ransom for you.
“Who will have all men to be saved, and come unto the knowledge of the truth. For there is one God, and one mediator between God and men, the man Christ Jesus; Who gave himself a ransom for all.”
(1 Timothy 2:4-6)
Now when we “defile the temple” (the physical body) the Bible tells us that there are consequences:
“Know ye not that ye are the temple of God, and that the Spirit of God dwelleth in you? If any man defile the temple of God, him shall God destroy; for the temple of God is holy, which temple ye are.”
(1 Corinthians 3:16-17)
And now for the climax to what I have been trying to say:
“Let no man deceive himself. If any man among you seemeth to be wise in this world, let him become a fool, that he may be wise. For the wisdom of this world is foolishness with God.”
(1 Corinthians 3:17-18)
The Standard American Diet (SAD), the world’s diet, is being used by the devil not only to deceive the believer as to what they should eat, but this same diet is what causes almost every physical and even psychological problem we experience. It is the cause of almost every problem we pray for fellow Christians to be healed of.
This diet is also the very thing that shortens our lives and ministries. It causes so many Christians to leave this world prematurely — before they have completed the ministry God has called them to.
This senseless and unnecessary destruction of the physical bodies of God’s children needs to cease.
Is There Any Hope?
Thirty-six years ago there was a Baptist evangelist in Texas by the name of Lester Roloff who for years had been trying the get Christians and preachers alike to get off the world’s diet and to adopt God’s diet.
His efforts were not appreciated.
In fact his efforts were met with great opposition and ridicule by many fellow preachers.
I knew Brother Roloff and was aware of his efforts to get Christians to change their diets, and I was also aware of the criticism he had received because I had joined in that criticism.
But now I needed help with my cancer and so I turned to Brother Roloff for advice as to how I could get rid of my cancer without drugs, radiation or surgery.
At his advice, I stopped putting the world’s diet into my body, started eating God’s diet, and soon my cancer started to go away.
Within a year my cancer was totally gone.
This healing caused me to do some scriptural research. It wasn’t long before I realized that God had given man a diet in Genesis 1:29.
I like to call it the “GOD” Diet, which stands for “God’s Original Diet”.
Not long after that, God led me to begin a ministry called “Hallelujah Acres” a ministry that teaches health from a biblical perspective.
Today, millions around the world have adopted The Hallelujah Diet which is based on God’s Original (Genesis 1:29) Diet.
As a result of eliminating the world’s diet and adopting God’s diet, tens of thousands around the world have written to report that after making the diet change they have recovered from over 170 different physical and psychological problems and they don’t get sick anymore.

Surprise: The latest research shows you can be overweight and fit, and thin but carrying too much fat.
Leah Dawson is unhealthy—at least that's what public health guidelines would have you believe. The 41-year-old mother of three, who manages her husband's athletic career (he's Olympic skier Toby Dawson), works out four days a week and carefully monitors her diet. Her cholesterol and blood pressure are enviable. But never mind all that: Leah Dawson is considered "unhealthy" because at 5'8", her weight has hovered near 170 pounds. That puts her at 26 BMI (body mass index—the height-to-weight formula doctors use to diagnose weight problems), which is in the overweight category. "My doctor would tell me that I needed to lose weight," she says. "My lab work would come out fine; I've even passed a stress test. But I'm never 'okay.'"
Thirty-nine-year-old Teresa Holler, on the other hand, is considered "healthy." As a physician assistant, Holler knows she needs to monitor her weight. But after a tough pregnancy six years ago, she slowed down her normally rigorous exercise program. Initially, the trim 5'3", 128-pound, size-5 Holler wasn't too concerned: Her BMI remained at 23, putting her in the healthy range of 18.5 to 24.9. Still, she began to worry that something was amiss. "I felt like I was getting this ring of fat around my midsection," she says. "And I was just less energetic." This led her to request a body-fat test from her doctor. She was shocked to find the amount of fat she was carrying on her diminutive frame—30 percent—qualified her as borderline obese, dramatically elevating her risk for diabetes and heart disease. "Here I was, spending my days telling other people how to get healthy, and I'd missed this," she remembers.
Health experts have been too strict with heavy people like Dawson and too lax with normal-weight people like Holler: Researchers at the Mayo Clinic have found that about half of American adults in the normal-body-weight category still have too much body fat—and given that these people also tend to have many of the risk factors associated with heart disease, that assessment is probably correct. "I'm a cardiologist, and I was seeing too many patients whose BMI checked out as normal but who didn't look right," says Francisco Lopez-Jimenez, MD, the Mayo doctor who headed the study. "Some had a big belly, some had low muscle mass. And they had high blood sugar and cholesterol. It became clear to me that the measurements we were using weren't working for these people."
How risky is it for a normal-weight person to carry too much fat? The answer lies in the way the body stores the stuff. "All fat isn't created equal," says Timothy Church, MD, PhD, a professor at Louisiana State University's Pennington Biomedical Research Center. "The deeply deposited kind—visceral fat—produces three times more bad chemicals than other types, and it drains directly into your liver."
Visceral fat bulks up the trunk of the body, and it has been directly tied to increased risk of diabetes and heart disease. (People who carry fat on the hips and thighs seem to have a lower risk.) Importantly, visceral fat tends to be the type normal-weight people have. It sneaks up on a person because it's not especially visible and it can build up without altering weight—replacing muscle that is naturally lost with aging. And that stealthy buildup of fat may help explain the results of a 2005 study in the Journal of the American Medical Association (JAMA): Researchers analyzed mortality data of people in different weight categories, from underweight to obese, and found that there were fewer deaths among overweight people than those in the normal-weight group.
That finding may come as quite a shock for Americans, who have had it drilled into them that being heavy will take years off their lives. But evidence to the contrary has been mounting, and a 2008 report on the U.S. population published in the journal Archives of Internal Medicine made the issue impossible to ignore: Half of Americans who are in the overweight BMI category and a third of those in the obese one (30 or greater BMI) are actually healthy—they have plenty of "good" cholesterol, normal blood pressure and glucose levels, and no other risk markers for heart disease.
"In other research I was doing, I was seeing a lot of people who were heavy but fine," says MaryFran Sowers, PhD, a professor of epidemiology at the University of Michigan who co-authored the study. "What was surprising about the study results was that the number of healthy overweight people was so prevalent."
Lopez-Jimenez agrees. "We've long assumed that all people who are overweight have a lot of fat, and that people with normal weight have less fat and more muscle," he says. "We now know that's not always true. There are fewer unhealthy overweight people out there, and many more at-risk normal-weight ones than we thought." In other words, BMI is an imperfect standard. A simple height-versus-weight number can't account for how a person is built, lean or stocky, big breasted or not.
So if BMI is flawed, what is the best predictor of who is healthy and who isn't? In Sowers's study, there was one reliable answer. People who qualified as heavy but still healthy tended to report being physically active. Indeed, her study isn't the first to note this. Findings published in JAMA in 2007 indicate that fitness level—regardless of weight—is the single strongest predictor of mortality risk. People with the lowest level of fitness were four times more likely to die than those with the highest. Longevity didn't require superhuman effort, either; people who could pass a minimal fitness test of walking for longer than five and a half minutes on a treadmill had half the risk of an early death as those who failed the challenge.
Taking all the new findings together, the lesson is that even at 170 pounds, Leah Dawson had it right: Eat a good diet and drop any unhealthy habits you might have. Then focus on exercise and forget about striving toward some standardized ideal of weight. "Fitness is the critical piece we're losing sight of," says Church. "People get so caught up with weight—they start to exercise, the scale doesn't move, and they get discouraged. They're not noticing that their pants fit differently, that they've actually lost dangerous visceral fat. When you become active, you're not just adding muscle, you're getting healthier." And that's what will help you live longer.

Raw Sunflower Seed / Lemon Dressing
This recipe was sent in by Kathie who lives in California: "Here is a totally raw, whole foods, salad dressing that can also be used as a mayonnaise, dip, sour cream, or a tartar sauce by reducing the amount of water a little to make it thicker."

2 1/2 cups distilled water
1 1/2 cups raw, hulled, Sunflower seeds
1 teaspoon Celtic Sea Salt (or to taste)
2 teaspoons Paprika
2 teaspoons Onion Powder (or flakes)
2 Lemons (juice from)
1 clove fresh Garlic (minced)
Directions
The secret to a fine dressing is letting the above ingredients blend in a strong blender (Vita Mix) for quite awhile until very creamy. Sometimes I substitute fresh basil and dill (or parsley) for the paprika. It then turns out a pale green instead of a pale paprika color. This dressing is very healthy because it has no free oils, cholesterol, hydrogenated fats, vinegar, sugar, or cooked ingredients. This recipe is really GUILT FREE, and is the recipe I use more than any other."

Quinoa-Black Bean Casserole recipe

I found this recipe by googling black beans and quinoa. It's great, but I used butternut squash instead of sweet potato (bcs I had some on hand), less cumin, and you really need to cook the quinoa by itself in water before adding the other stuff; it does not seem to really puff up otherwise. Also, the cheese is optional.
Stepf's Quinoa-Black Bean Casserole
This recipe came about because I had just made vegetable enchiladas and had leftovers, plus quinoa from earlier in the week. Thankfully, this experiment yielded a hearty, delicious meal.
I cooked up a batch of dried beans that I seasoned with onions, garlic, chiles and spices. If you use canned beans, you might need more spices. Try adding Chef Meg's Taco Seasoning.
Serve this with steamed broccoli or wilted spinach and a dollop of light sour cream or plain Greek yogurt.
40 Minutes to Prepare and Cook
Ingredients
1 cup dry quinoa
1 cup salsa
2 eggs
1 cup shredded low-fat cheddar cheese
2 cups shredded sweet potato (use a box grater or a food processor)
3 cups black beans (or 2 cans, drained and rinsed)
1 T ground cumin
Liberal pinches salt and pepper
Directions
Cook quinoa according to package directions.
Preheat oven to 350°F.
Mix quinoa, black beans, sweet potato, half the cheese and the cumin in a large bowl. In a small bowl, mix the eggs and the salsa, then pour over the vegetables. Pour all ingredients into a 9x9 casserole dish coated with nonstick cooking spray.
Sprinkle on remaining cheese and bake for 30 minutes, uncovered.

Liberal pinches salt and pepper
Directions
Cook quinoa according to package directions.
Preheat oven to 350°F.
Mix quinoa, black beans, sweet potato, half the cheese and the cumin in a large bowl. In a small bowl, mix the eggs and the salsa, then pour over the vegetables. Pour all ingredients into a 9x9 casserole dish coated with nonstick cooking spray.
Sprinkle on remaining cheese and bake for 30 minutes, uncovered.

Veggie Chickpea Burgers with Tahini Sauce recipe
Note from Miriam:
These are yummy! I used less cayenne pepper than recipe calls for and they were still a little spicy. Use it according to your tolerance for spice.
God's Garden of Eden
Chickpea Burgers with Tahini Sauce
(delicious♥ you don't have to be a vegetarian or vegan to enjoy these ultra-YUMMY, ultra-nutritious, low-fat burgers):
Ingredients
1 15-ounce can chickpeas (or 1 1/2 cups cooked), drained and rinsed
1 yellow onion, finely chopped
3 cloves garlic, minced
1/4 cup chopped fresh parsley
2 tablespoons tahini
1 1/2 to 2 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1 teaspoon lemon juice
1 teaspoon baking powder
1 cup plain bread crumbs
4 buns or pita pockets
Instructions
♥Heat the oven to 400 degrees.
♥Pulse the chickpeas in a food processor until thick and pasty. (You may mash them by hand, but it is a little more labor- intensive and time- consuming.) Transfer to a medium- size bowl.
♥To the bowl, add the onion, garlic, parsley, tahini, cumin, coriander, salt, black pepper, cayenne pepper, lemon juice, and baking powder. Slowly add the bread crumbs until the mixture holds together. Add more bread crumbs, as needed. Shape into patties.
♥Place on a nonstick cookie sheet and bake for 10–12 minutes, or until golden brown on the bottom. Using a spatula, flip each patty over, and cook for 10–12 minutes more until the other side is golden brown. Remove from the oven. Alternatively, you may fry the patties with a little oil in a pan on the stovetop.
♥While the burgers are cooking, make the tahini sauce, below.
♥Notes: If your chickpeas seem too dry to form a paste, try adding water by the tablespoon until they become more “sticky.” If your burgers still don’t hold together, try pulsing the mixture a few times in the food processor.

Two ways to do everything: the world's way and God's way. Which way are you choosing to take care of your health?
Is There A Better Way?

America, though it spends more money per capita on “Health Care” than any other nation on Earth, is close to being the sickest nation on Earth!
More money is spent on health care in the USA than in any other nation in the world, and a greater percentage of total income in the nation is spent on health care in the USA than in any United Nations member state.
The World Health Organization (WHO), in 2000, ranked the U.S. health care system as the highest in cost, 37th in overall performance, and 72nd in overall level of health.
In 2009, the United States federal, state and local governments, corporations, and individuals, together spent $2.5 trillion on health care. That amount breaks down to $8,047 for every man, woman, and child in the country each year. This amount represented 17.3% of the GDP in 2008.
Health insurance costs are rising faster than wages or inflation, and medical causes were cited by about half of bankruptcy filers in the United States in 2001.
How Is This Health Care System Working For You?
With National Health Care having been signed into law and with the constantly increasing cost of health care, are we getting the results and seeing the improved health promised by our current government?
Of course, the answer is a resounding “NO”!
If any business in the business world provided such poor results, it would go out of business. But not the health care business. The worse the results being obtained, the higher the cost, and the more it thrives.
Is there not something wrong with this picture?
Yet our government continues to subsidize this failed industry with tax payer dollars (yours and mine) which will force every citizen, whether they pay taxes or not, or want to be a part of it or not, into this failed system.
From where I sit, I am constantly receiving emails from people who have given this system every opportunity to fix their broken bodies — but their results prove the current health care system’s efforts are a dismal failure.
Letters Tell of Health Care Failures
“Good morning Rev. Malkmus, I am so up to my ears in trying to feel better. I have been dealing with health issues since 2003. Here’s a quick rundown on what happened to me:
In 2003 I took a drug for what the doctor said was a bladder infection. I took only one drug ‘Floxin’, one pill, one time, and that one pill has destroyed my life. I ceased being that happy active mom and wife. I have spent the past eight years looking for help from the medical community.
I’m so tired of going to doctors looking for answers and finding none that I could scream. This one pill, taken only one time, has affected my whole central nervous system. I feel on edge every second of every day. It is awful. I cry myself to sleep most nights thinking of how my life used to be before taking that pill.
I am a Christian and have prayed to the point I don’t even know how to pray anymore. Rev. Malkmus is there anything at all that you can think of that can help me or do you know of any doctor that might be able to shed some light on how to overcome the affect this drug has had on my life and body?”

“Dr. Malkmus, My 57-year old husband has advanced stage 4 prostate cancer with bone metastasis. He was sent home in November 2010 to die as the doctors said there was nothing more they could do for him.
Over the years and especially since last fall I have encouraged him to go vegan but it was not an easy sell despite the fact that we are both ordained ministers. We should have been eating to live – not the opposite as the world is doing, living to eat – and we have repented.
In January 2011 I did convince him to begin vegetable juicing and it started to turn around his cancer. His PSA fell from 348 to 112. However, he still insisted on some animal products and as a result in April his PSA started to rise again.
We are both on leave from ministry at this time as he is very ill. His left side, especially his left leg is losing circulation. The doctors want to give him more radiation but he says ‘no’.
I have just completed Dr. Campbell’s three online courses from Cornell on plant based nutrition and one of my instructors directed me to you and the Hallelujah Acres website. I really thank you for all you are doing in the field of biblical nutrition. I am astonished by all that I have learned.
We both lost our first spouses to cancer. My first husband and the father of my two children died at age 33 of non-Hodgkin’s lymphoma. Now my second husband has terminal cancer. I believe God has a nutritional ministry in mind for the two of us once he recovers.”

In My Seminars…
In my seminars I will often ask questions of those attending. Here are a few of those questions that I ask:
How many of you have had a friend, loved one, or family member who was diagnosed with cancer?
Almost every hand in the room goes up. Then I ask how many of those who had cancer died after being treated for their cancer. It is hard sometimes to see much difference between the numbers of those who had cancer and those who died following cancer treatment.
How many of you, or a friend, family member, or loved one were prescribed a drug for the physical problem being experienced?
The response is almost 100% of those present.
How many had an adverse reaction to a doctor prescribed drug?
Once again, almost every hand was raised.
How many of you, or a friend, family member, or loved one was cured of the physical problem they were given the drug to correct to the extent they no longer had need of that drug?
Hardly ever does a hand get raised.
The Two Letters Above
For a moment, let’s reflect on the two letters above and the results to the questions I ask in my seminars to see how they compare.
In the letter from Marilyn, both her spouse and her husband’s spouse died following cancer treatment and now her current husband is in such critical condition after medical treatments, they have sent him home to die.
Is that not the same results indicated by the show of hands when I asked in my seminar “How many have a friend, loved one, or family member who was diagnosed with cancer?”
And when I asked “How many of those died after treatment,” did not it produce the same results as Marilyn and her husband experienced with their first spouses?
Now consider Jackie’s reaction after taking just one pill one time. Not only did it not correct the problem but produced new symptoms that have destroyed her life for the past eight years.
Isn’t that similar to results expressed by the thousands of people in my seminars who have not seen their physical problem cured as a result of taking a drug?
The World’s Way
What I have shared above is the world’s way of dealing with physical problems!
I find it so amazing that the world’s approach to physical problems today produces no better results than the results the doctors of the Bible 2,000 years ago:
“And a certain woman, which had an issue of blood twelve years, and had suffered many things of many physicians, and had spent all that she had and was nothing bettered, but rather grew worse.” (Mark 5:25-6)
Friends, the result people obtained going the world’s way in Bible times is the same today when they go the world’s way in their attempt to correct physical problems.
So the logical question one must ask is: “Is there a better way?”
Thankfully there is indeed a better way — God’s way!
God’s Way
Let’s see if the Bible can shed some light on the subject…
God Created Man – “AND THE LORD GOD formed man of the dust of the ground and breathed into his nostrils the breath of life; and man became a living soul.” (Genesis 2:7)
God Placed Man In A Garden – “AND THE LORD GOD planted a garden eastward in Eden: and there he put the man whom he had formed.” (Genesis 2:8)
God Told Man What To Eat – “AND GOD SAID, Behold I have given you every herb bearing seed (vegetable), which is upon the face of the earth, and every tree, in the which is the fruit of a tree yielding seek; to you it shall be for meat.” (Genesis 1:29)
Man Charged With Taking Care Of His Own Body – “I beseech you therefore brethren, by the mercies of God, that ye present your bodies a living sacrifice, holy, acceptable UNTO GOD, which is your reasonable service.” (Romans 12:1)
Man Told Not To Pursue The World’s Way – “And be not conformed to this world: but be ye transformed by the renewing of your mind, that ye may prove what is that good, and acceptable, and perfect WILL OF GOD.” (Romans 12:2)
Consequences Of Going The World’s Way – “Be not deceived, GOD IS NOT MOCKED, for whatsoever a man soweth, that shall he also reap.” (Galatians 6:7)
So we have messed up! We Christians have been following the “world’s way” instead of God’s way in how we take care of our physical bodies. We have consumed the world’s food and drink, and as a result have become sick, gone to the world’s doctors to get better, taken the world’s drugs, and suffer the same physical and emotional breakdowns as the world and to the same percentages.
Is It Too Late To Change?
For most people it is not too late to change and correct the results they have obtained by doing things the “world’s way.” In fact, almost every physical problem presently being experiencing can be corrected by ceasing to feed the body the world’s way and by starting to nourish it God’s way if the world’s way” has not already done irreversible damage.
